Centering like everything else is in the eye of the camera holder. lol
Actually I try never to center.
If you talk to people on AP or our old buddy Bobby, they all tell you to
never center. And always leave more space at the front of the fish to make il look like its going somewhere.

In far from an expert, but
to me, pictures can easily be over-cropped. When this happens,
to me, they look over-processed.
Again,
all in the eye of the beholder, I just like a little more space in front of the fish. This also makes the fish's face (which should be in focus) the focal point of the picture.
