My T5 and regular fluorescent fixtures need new bulbs. When I look on-line there is a bewildering array of choices.

My tanks are all fish-only.

Should I just go with the bulbs that offer to bring out the best colors in the fish or what about 10K daylight bulbs and such?

You can always try several different types of bulbs to see which one/s you prefer. The 6700k and 10,000k are more useful for plants, but if you want a more natural color/look from the fish the daylight bulbs are good.
It's just a matter of what looks good to you. Some folks like colored gravel, some prefer natural.

For africans, I prefer a 2-bulb combo of actinic and 10k. 50/50 bulbs are just not bright enough in standard flourescent, but work fine in power compact. For all other fish, I prefer 8k. AGA flourescents are 8k.
