My grandfather has a kiln.

I was thinking of making some custom caves and other structures, but then questions abounded on staining and such. Is there any guide for making aquarium greenware?

Some clay, even after it has been bisque fired, will breakdown if submersed in water. Granted that takes years to decades but as it does so you should look into what the clay is made out of and check that its still safe for the fish. I think the clay needs to be fired at 2000+ degrees to be permanently sealed and not breakdown, or re-clay. You need to find a clay body that will withhold temps up to 2000 degrees, which I believe is cone 7 or higher.
