how often do they breed and is there any special requirements in terms of water chemistry?

Convicts will breed in the bag,lol. I don't think they need any special water requirement's.

Yeah, I had a pair in a 20g that laid eggs every few weeks. I just used straight tap water with dechlor without any issues. As long as the watres clean, I think they'll readily breed in just about anything.
